3-Minute Chocolate Fudge.


This is a great recipe if you're craving chocolate or something sweet, or, if you're looking for something easy and quick to make for a party or for friends/family/partners/yourself. Although it takes minutes to make, it does have to be refrigerated for at least two hours, so technically it takes longer than 3 minutes, but, I mean, that doesn't really count, does it? You can make it with any kind of chocolate you like. This particular time I chose to use dark chocolate, and it was delicious! Enjoy! xo Caroline

Easy 3-Minute Chocolate Fudge
Makes about a dozen 1-inch squares

You'll Need:
500 g or 31/2 cups best-quality chocolate (dark, milk, or white)
300-ml can of sweetened condensed milk

You'll Do:
Line the bottom and sides of an 8x8-inch pan with overlapping pieces of plastic wrap or waxed paper. Make sure the pieces also hang over the sides of the pan. Combine chocolate and milk in a large microwave* safe bowl. Microwave, uncovered and on medium until melted, about 3 to 4 minutes. Don't forget to stir halfway through! Once melted, remove and stir until smooth and evenly mixed. Scrape mixture into prepared pan  and press down, smoothing the top. Fold overhanging ends of plastic wrap over the fudge to cover. Refrigerate for at least two hours or overnight. Keeps well for up to a week.

*Note: If you don't want to use or don't have a microwave, you can melt the chocolate in a double boiler and the milk and a saucepan. Mix together once the chocolate is melted and milk is heated.

Easy Summer Make-up.

This post was inspired by a post that Anne did over at The Style Visitor (a fabulous blog, by the way!) that featured what make-up she uses daily. Well, I've been using the same 'summer' make-up routine pretty much all Spring and Summer so far. It's pretty basic, but great for hot days, running errands, having a friend over for dinner, or grabbing a coffee with Jimmy because it's just so quick, easy, and light. It also adds just the right amount of colour to 'bring out' my features. I start with my favourite Body Shop foundation, then dab on my favourite Physician's Formula concealer. I then use a powder brush to apply my favourite face powder (I've been using this stuff by Marcelle for years, and I mean years!). Then I brush my cheekbones and my hairline with Benefit's Dandelion Face Highlighter before adding bronzer in the same areas and a little bit of blush on the apples of my cheeks. Before applying my favourite natural mascara (the stuff really is amazing), I curl my lashes for extra volume. Finally, I apply the best tinted lip balm EVER for a flirty, polished look. And ta-da! Europe Snapshots Part I.

Here are some snapshots of what I've been up to the past few days in Europe! After getting no sleep on our flight to London (beautiful sunrise though!) we took another flight to Vienna and finally arrived in Bratislava by car. I've been enjoying beautiful views and have somehow managed to drink fruity teas, despite the hot heat. We've occupied our evenings with chitchat and board games with my family. Tomorrow we head to Budapest and I'm so so so excited! xo Caroline

All Packed, all Gone.


Thought it might be fun to do a little post about what I brought with me on my trip! The first photo is of stuff that I included in my carry-on and the second and third is of stuff that I included in my ONE suitcase. Yes, I know. It was hard. I've always been a two-suitcase-kind-of-gal. But obvi I can't truck to suitcases around Europe with me, that would be more of a burden than anything else. Let's hope what I've brought with me is a good balance between enough yet not too much (i.e. stuff that I think will get used but that--cmmon'--won't). I rolled everything up and it fit pretty perfectly, with a bit of extra room. Of course, I also have my toilettries and cosmetics to include.

Canada Day.


Our Canada Day was very nice. We went up to my aunt's cottage for some relaxation time and to enjoy good food, good company, and a few good drinks. Although I didn't go swimming, Jimmy did, though looking back I kind of wish I did! We even had a bombfire (it's been years for me!) and watched the neighboor's fireworks from across the lake. How was your weekend?

Oh, GUESS WHAT. Today is the day! Today is the day I leave for Europe with Jimmy for three whole weeks! You can probably imagine how excited I am. Think of a kid on Christmas (also very me). I don't know what to do with myself. I'm just so anxious and excited! But despite the fact that I will be away for three weeks, I will still be blogging! I've prepared two posts a week for the next three weeks, one every Tuesday and one every Thursday. I'm very excited to share them with you! I'll also be posting updates from my iPhone so stay tunned! xo Caroline
