Reminiscing

Here are some random photos from the past two weeks. You'll notice that I pretty much always wore my hair up, but with swimming constantly and being just plain lazy, I couldn't resist! (I also dislike my hair down, it's very annoying.) Looking back on these photos brings up mixed emotions: I have such happy memories, but I am also sad that it's over. But that's all part of life, isn't it?

A Day at The Beach

Happy Monday! Here are some photos of a day I spent at the beach in Ingonish, NS. This beach was incredible, the water was warm (ish), and the air was hot. A perfect beach day. Jimmy and I had fun frolicking about in the sand and water like a couple of teenagers. Oh, how I miss vacation days...

Blueberry Picking

I have finally hooked my iPhone up to my computer so that I can momentarily access internet. That being said, here is a quick post! These photos are from our visit to Lunenburg County Winery and their blueberry u-pick last week. My parents, Jimmy, and myself had so much fun sampling wine and picking amazingly juicy blueberries.  We are now in Cape Breton enjoying the sights and scenery. More photos will come!

Take A Hike

So some may have noticed that my blog has been acting up. My posts have been coming out in duplicates! Needless to say, Jimmy and his super awesome patience have fixed it, yay!

We are off to Cape Breton tomorrow, which is exciting; however, I will not have internet at the cottage there! (Get this: it's 8 miles down a dirt road!) This scares and excites me. Sadly, I will be unable to post on my blog!! I hope my followers will keep coming back anyway because I will post the minute I can!! Really. I have so many exciting photos to show, and more are to come, I'm sure!

Speaking of photos, here are some photos from a hike I did with my Mom to Gaff Point. Was it ever beautiful! The weather was perfect and the scenery and isolation were amazing.

Cottage Life

Here are some photos of the cottage I've been staying at all week. It's so lovely! As you can see, it's right on the water and it is so peaceful and quiet--perfect for a vacation! It's also near a wonderful sandy beach with enormous waves, which Jimmy and I have been taking advantage of. AND the weather has been fabulous! Although, I have to say, I've been so lazy that I haven't been putting together many outfits. I've really been just enjoying throwing whatever on!

Maritime Carrot Cake

I made my all-time favorite cake yesterday at the cottage for a work party. My aunt Sylvia’s carrot cake is the best carrot cake you will every try, guaranteed. She got the recipe from a friend of a friend from the Valley. Recipe bellow!










Maritime Carrot Cake

Ingredients:
1 cup sugar
1 cup oil
3 eggs
1 1/2 cups all purpose flour
2 cups grated carrots
1/2 tsp salt (optional)
1 1/3 tsp baking soda
1 1/3 tsp cinnamon
1/2 cup walnuts or pecans
1/2 cup coconut (sweetened or unsweetened)
1/2 cup raisins
1/4-1/2 cup drained crushed pineapple 

4 oz light cream cheese
4 tbsp butter
2 1/2 cups icing sugar
2 tsp vanilla

Method:
1. Beat the sugar and oil in a large bowl until they are well blended.
2.  Add the eggs and beat well.
3.  In a separate bowl, sift the flour, baking soda, cinnamon, and salt if using. 
4.  Add these dry ingredients to the wet egg mixture blending well.
5.  Mix in the carrots, nuts, coconut, raisins and pineapple (if using). 
6.  Pour the mixture into a well greased bundt pan.
7.   Bake at 300ºF for 45 to 60 minutes or until a cake tester comes out clean.
8.   Cool cake for 60 minutes and then turn onto a serving platter.

1.  Beat the cream cheese and butter together until they are well blended.
2.  Add sugar and vanilla.
3.  Beat until light and fluffy
4.  Ice the cake when it is completely cool. 

My aunt and I usually double the icing and use pecans. Enjoy!!
